



This week's meal includes Fresh Corn Chowder, Corn Focaccia, and Corn Cookie Ice Cream Sandwiches. The add-on this week is Pecorino Popcorn. It's ALL about corn this week!
The Fresh Corn Chowder is made from Iowa sweet corn—of course. It's made with corn kernels and corn milk. I squeeze all the sweet corn juice out of the corn cob to make broth for the soup. It has such great flavor. The soup also has onions, potatoes, thyme, cream, and bacon. It's my favorite summertime soup. It's so good you'll want to eat it in 100˚ weather.
The Corn Focaccia is my basic focaccia recipe topped with Iowa sweet corn, fresh thyme, and flaky salt. I made up the combination, and I love it. It's ideal dipped in the soup.
The Corn Cookie Ice Cream Sandwiches are corn cookies made from corn flour and all-purpose flour. They are similar to sugar cookies but have a hint of corn flavor. Between the cookies is my favorite handmade Honey-Vanilla Ice Cream. The not-too-sweet ice cream lets the taste of the corn shine.
For the add-on this week, I am making Pecorino Popcorn. It's made fresh with Maytag Popcorn. Once it's popped, it's topped with butter, kosher salt, freshly ground black pepper and freshly grated pecorino cheese. It's a delightful snack.
